Tapioca flour (otherwise known as tapioca starch) is derived from the Cassava plant. Tapioca is a good substitute for corn starch and is very fine. It can be useful for thickening soups, gravy and sauces. It is perfect for binding other gluten free flours and has a very light, sweet flavour. Tapioca flour is achieved from the grinding down of the dried roots of the Cassava plant and is a grain free flour.
